MINIATURE CHERRY CHEESE CAKES 
2 (8 oz.) pkgs. cream cheese, softened
3/4 c. sugar
2 eggs, well beaten
1 tbsp. lemon juice
1 tsp. vanilla
24 vanilla wafers
1 can cherry pie filling

Beat cream cheese, sugar, eggs, lemon juice and vanilla until light and fluffy. Line small muffin pan with "mini" foil cups. Place a vanilla wafer in bottom of each. Fill cups 2/3 full with cream cheese mixture. Bake at 375 degrees for 15-20 minutes or until set. Top each with 1 tablespoon of pie filling; chill. Yield: 2 dozen.
