EASY COCONUT CUSTARD PIE (IN A
BLENDER)
 
2 c. milk
4 eggs
1/2 c. flour
1/2 tsp. salt
1 tsp. vanilla
1 c. coconut
3/4 c. sugar
1/4 c. butter (very soft)

Put all ingredients in blender. Turn blender on for 20 seconds. Pour into well buttered deep dish 9" pie tin or glass dish. Bake 40 to 50 minutes at 350 degrees or until knife comes out clean. This is a self crust pie.

First time for making a pie in a blender. Pleased with the outcome. Will definitely make it again. Recipe was easy to make. I put all dry ingredients in one bowl (suggestion from reviewer on another recipe), all wet ones into another bowl, and stirred ingred's in each before putting into the blender. Used flaked sweet coconut, holding out 1/4 cup to sprinkle on top before baking. Self-crust pie is great. The day after baking the pie tastes even better. I wonder if it makes it to the end of the week?

Yes, any non-dairy milk should work. I've made it with almond milk before.
