LOW CAL BLENDER COCONUT CUSTARD PIE | |
2 c. skim milk 1/2 tsp. vanilla butternut flavor 1 tsp. vanilla extract 2 tbsp. baking powder Artificial sweetener equal to 18 tsp. sugar 4 eggs 2 tbsp. plus 2 tsp. low cal butter 1 tsp. coconut flavoring 1/4 c. plus 2 tbsp. flour 1 tbsp. shredded coconut Ground nutmeg In blender, combine all ingredients, except nutmeg. Blend 1 minute. Pour mixture into 9 inch pie pan that has been sprayed with Pam. Let stand 5 minutes. Sprinkle with nutmeg. Bake 35 minutes, then chill until set and lightly browned. Cool slightly, then chill and serve cold. Each serving equals, 1 protein, 1/2 bread, 1 fat, 1/2 milk, 8 calories (optional), 90 calories if sugar or fructorse is used as sweetener. |
