BOSTON CLAM CHOWDER 
2 med. diced potatoes
2 qt. milk
6 slices bacon, diced
1 c. chopped onion
1 c. cut celery
2 cubes butter
1 c. flour
2 tsp. salt
1/2 tsp. pepper
5 cans (6 oz.) minced clams
3 drops yellow food coloring (optional)

Boil potatoes, heat milk. Saute bacon. Add onion and celery; cook to light brown. Melt butter in large kettle. Add flour, salt and pepper. Simmer gently to lightly brown. Slowly add hot milk. Add potatoes, bacon, onions and celery. Add clams. Cook slowly 10 minutes.
