ITALIAN CASSEROLE 
1 lb. ground turkey or beef
1 green pepper, chopped
1 zucchini, chopped
4 oz. can mushrooms, drained
1 tbsp. Parmesan cheese
1 tsp. each basil, oregano and taco seasoning
For extra spice, add a few drops of red hot sauce
1 eggplant, peeled and cubed
1 onion, chopped
1 clove garlic, chopped
15 oz. can tomato sauce

Preheat oven to 350 degrees. Brown vegetables lightly in Pam sprayed skillet. Set aside. Brown meat. Mix together in glass casserole dish. Add seasoning and top with sauce. Sprinkle cheese over sauce. Bake 30 minutes. Can be microwaved 15 to 20 minutes at 90% power.

Since microwave ovens vary in power, you may need to adjust your cooking time.
