KOLACHKIS 
1 (8 oz.) pkg. cream cheese
1 c. butter
1 tsp. vanilla extract
2 c. flour

Combine cream cheese, butter and vanilla in large bowl. With pastry blender cut in flour until dough is thoroughly mixed. Shape into 6 balls, refrigerate for 2 hours.

FILLING:

1 lb. walnuts, ground fine
6 tbsp. butter
Juice of 1 lemon
6 tbsp. sugar

Mix. Preheat oven to 350 degrees. Roll out dough like for a pie and cut in 6 pieces. Put filling at the wider part and roll up like a crescent. Bake at 350 degrees for 15 minutes. When cold, sprinkle with confectioners' sugar. Bake in an ungreased cookie sheet. If filling is too thick, add sweet cream.

This is THE perfect kolachkis recipe. My mom always made hers like this and they are scrumptious. The only thing we did differently was to cut the pastry into squares and roll them up like little logs. We also made prune (Lekvar) filled ones that we made into pinwheels shapes by pinching the squares together in the middle. The dough is the key ... must use equal parts cream cheese and butter (my mom's recipe was 1lb. of each ingredient - ie. 1 lb. butter, 1 lb. cream cheese, and one lb. flour).
