FRIED PIE DOUGH 
2 1/2 c. flour
1 tbsp. sugar
1 tbsp. baking powder
1 tsp. salt
3/4 c. plus 1 tbsp. evaporated milk
1/3 c. shortening
1 egg, beaten

Mix flour, sugar, baking powder, and salt. Cut in shortening until it looks like coarse cornmeal. Combine egg and milk and mix into flour mixture. Stir until mixture is moist. Cover and chill 24 hours. Divide into 20 portions, then roll on floured surface into circles for pies. Have diced fruit or thickened fruit cooked and cooled. Put 2 tablespoons of fruit into circle and fold, cover and crimp edges. Fry in deep fat until browned.
