MATT'S HOT CHEESE SPREAD
You can adjust this recipe to suite your taste... I have been making this for 30 years and everybody loves it. You will too!

1 lb. Velveeta cheese (block cheese)
3 or 4 tbsp. diced pickled jalapenos
1 tbsp. diced pimentos
4 tbsp. milk
3 tbsp. juice from jalapeno jar

Note: Both jalapenos and pimentos can be found in jars, usually in pickle section of most grocery stores.

Cut Velveeta cheese into a large microwave proof dish, about 8 cubes. Cook on HIGH in microwave oven for about 3 minutes or until cheese starts to melt.

Add the rest of ingredients and stir in. Cook in short increments (about 2 minutes) stirring each time to keep cheese from burning.

When completely melted (8 or 9 minutes) pour into smaller serving dishes. Let cool for about an hour ( we put it in the refrigerator).

This cheese should be slightly softer than the Velveeta cheese. Spread on Doritos or your favorite corn chips.

Since microwave ovens vary in power, you may need to adjust your cooking time.
