ROBERT'S HOT PIMENTO CHEESE SPREAD | |
12 oz. sharp Cheddar cheese, grated 5 med. size sweet pickles, grated or chopped 4 oz. pimento, chopped 4 tbsp. pickle juice 4 heaping tbsp. mayonnaise Add salt, pepper and hot sauce (Tabasco or Texas Pete) to suit taste. Mix well and use as a spread for sandwiches or on crackers. |

except for The Hot sauce choice. Tapatio is much Much better as it has no vinegar and is KILLER. a few shakes of Dried ground Habanero and you will see a huge difference. will convert this "Mild" pimento cheese spread into the gnarliest HOT stuff.
I also like to use miracle whip light instead of mayo - is has less fat and sugar and zings those pickles up another notch. I use KIRKLAND Sharp. 13 bucks for a 5 pound brick, you will find that people will want to have some of this for their own, making extra is prudent. :O)
