PRAIRIE PEA SALAD 
6 tbsp. mayonnaise
1/4 c. lemon juice
1/2 c. minced green onions
2 c. frozen green peas, unthawed
1 c. cubed cheddar cheese
1/8 tsp. salt
1/8 tsp. pepper
2 c. lettuce, torn in bite size pieces
8 slices bacon, cooked and crumbled

On day before serving, combine all ingredients except lettuce and bacon in medium size bowl. Cover and refrigerate. Just before serving, add lettuce and bacon. Toss well. Makes 6 servings.
