PRAIRIE RICE SALAD 
3 c. cooked rice
1 c. chopped celery
1 c. chopped green pepper
3 tsp. minced onion
1/4 c. chopped pimento
1/4 tsp. pepper
1/2 tsp. salt
1 tsp. sugar
1/3 c. Italian dressing

Cook rice in chicken broth or add chicken bouillon cube to water. Combine rice, celery, green pepper, onion and pimento. Chill. Just before serving add salt, pepper, sugar and dressing. Garnish with wedge sliced tomatoes. Serves 6-8.
