ZUCCHINI AU GRATIN 
1 1/2 lbs. zucchini
1/2 c. water
2 eggs, beaten
1 c. cream
1/4 c. grated Gruyere or Parmesan cheese
Pepper
1 tbsp. butter

Wash squash; trim ends. Cut into 1/2 inch pieces (diagonal). Put in pan with water and salt. Cook until just tender. Mix eggs, cream, and cheese together. Season with salt and pepper. Transfer to oven- proof dish. Pour mixture over squash. Grate a little cheese over top. Dot with butter and bake in a 400 degree oven for about 10 minutes or until egg mixture is just set and top is golden brown.
