8-10 med. potatoes, peeled & cut into 8ths 1/2 c. water, if using fresh potatoes 1 (8 oz.) cream cheese 1 (8 oz.) French onion dip 1/2 tsp. salt 1/8 tsp. pepper 1/2 tsp. garlic salt butter Paprika You may use instant mashed potatoes, mix as directed for 8 servings, omitting milk. Place fresh potatoes and water in 2 quart casserole. Cook covered in microwave full power for 15-20 minutes or until tender. Stir after 10 minutes. (Omit if using instant mashed potatoes.) Beat cream cheese, onion dip, salt, pepper and garlic salt in large mixing bowl until well blended. Add hot potatoes, one at a time, beating until light and fluffy. Spoon potatoes into 2 quart casserole. Dot with butter. Heat, covered, on full power for 3-5 minutes or until heated through. Sprinkle with paprika as desired before serving. |
