PARTY POTATOES 
1 box instant potatoes
8 oz. cream cheese
1 lg. sour cream
32 oz. cheddar cheese (less, if you prefer)

Make instant potatoes according to box to serve 16. Cut cream cheese into chunks and whip into potatoes. Add sour cream and whip together. Put 1/2 of mixture into 9 x 13 inch baking dish. Sprinkle 1/2 of cheddar cheese on top. Add second half of potatoes and cover with the rest of the cheddar cheese. Bake at 350 degrees for one hour. Make sure instant potatoes are stiff.
