MARINATED VEGETABLE MEDLEY 
2/3 c. vinegar
2/3 c. vegetable oil
1/3 c. chopped onion
1 tsp. sugar
1 tsp. salt
1 tsp. dried whole basil
1 tsp. dried whole oregano
1/8 tsp. garlic powder
1 (14 oz.) can artichoke hearts, drained & quartered
1 c. broccoli flowerets
1 c. cauliflower flowerets
1 c. sliced carrot
1 c. sliced fresh mushrooms

Combine first 8 ingredients in a small saucepan. Bring mixture to a boil; cover, reduce heat and simmer 12 minutes.

Combine vegetables and vinegar mixture. Cover and chill at least 3 hours. To serve, use a slotted spoon. Yield 8 servings.
