CINNAMON NUTS 
1 c. sugar
1/2 tsp. cinnamon
1/8 tsp. cream of tartar
1/4 c. boiling water
1 1/2 c. walnuts, mixed nuts or a combination of nuts and raisins
1/2 tsp. vanilla flavoring

Mix sugar, cinnamon, cream of tartar and boiling water in pan. Boil to 246 degrees on candy thermometer or until a small amount forms a soft ball when dropped into cold water. Add nuts and cool slightly. Add vanilla, and stir until mixture "sugars" and coats the nuts. Then turn out on to waxed paper and separate nuts. Makes about 3/4 pound.
