CINNAMON NUTS 
2 c. sugar
1 c. water
1 tsp. cinnamon
1/4 tsp. salt
2 cap fulls of vanilla
1 lb. nuts (any kind)

Boil sugar, water and cinnamon to 246 degrees. Remove from heat. Stir in vanilla until JUST BEFORE it become sugary. Add nuts quickly. Keep stirring until nuts are all well coated. Turn out onto wax paper or foil. Separate with 2 forks and store in an airtight container.
