GROUND PORK CASSEROLE 
1 med. onion, chopped
1 c. thinly sliced celery
1 c. Minute Rice, not cooked
1 can cream of chicken soup (no water)
1 can cream of mushroom soup (no water)
1 lb. ground pork

Saute the onion and celery in small amount of shortening. Add the ground pork and brown. Mix the soups together until blended. Add rice, onion, celery and pork. Put into buttered casserole dish and bake covered for 1 hour in 350 degree oven.

TIP: Some chopped green pepper and shredded carrots may be added to above ingredients. This adds color to the dish.

Was pretty good. I seasoned the vegetables and meat, pre-cooked the rice and added cheese at end and baked for 10 min. til cheese was melted. My husband liked.

Surprisingly good. I seasoned meat with garlic, added green pepper, and, for the mushroom soup, used the variety with roasted garlic. This added a lot of flavor. I also added 1/2 soup can of milk which gave the casserole a good consistency. I will make again.

Easy and delicious! Seeing me pour the mix into the casserole dish the picky member of the house said, "Ugh! What's that? It looks awful." After the first bite the comment turned to, "This is REALLY good!"

I made pretty much as written. The meat I used was fresh ground pork steak that I trimmed to about 15% fat. I added chopped fresh mushrooms to the vegetable mix. I used two cups of rice and one can each of cream of mushroom, chicken and celery. Also added a couple tablespoons of chicken broth and some "pul biber" a mild flaked red pepper (no seeds) from Turkey that seems to have no analog in the USA.
