EASY PEASY POTATO WEDGES 
All you need are a bottle of Italian salad dressing (or any herb dressing with oil), salt, pepper and some onions. If you like, add some small pickled onions.

Preheat oven to 250°F.

Remove skin from potatoes and cut them into wedges (the bigger you make the cuts the longer it will take to bake.

Put the wedges in a bowl and pour Italian dressing over top. Mix or shake until all the potatoes are well coated.

Place potatoes in an oven safe pan or pot. (You may add some pickled onions if you wish).

Bake uncovered in the oven for about 30 to 40 minutes. Turn potatoes every 15 minutes.

Variation: You can add some cheese over top of the potatoes several minutes before removing from oven.

I feel pretty at home in the kitchen, but have never for the life of me heard of pickled onions. Cocktail onions is the closest I can imagine but can't imagine them on potato wedges. Or maybe French's fried onions from a can. Let me know if I have been missing something.

I love pickled onions. You're right, they are similar to cocktail onions (when sold on the shelf) except they are in vinegar. The Fish and Chip shops in the UK would sell GIANT pickled onions... YUM!

Mike, I can't believe that you've never heard of pickled onions, it's part of the staple British diet to go with cold meat and cheese. Try making your own by peeling some shallots, place them in a clean jar with a tbsp. of salt, 2 tbsp. brown sugar, a tbsp. of whole black pepper corns and 2 dried red chilies. Cover with vinegar and leave in fridge for at least 3 weeks but will keep for up to one year.

hey i have never used those ingredients i find something that is very easy and fun is to put in herbs and spices that blend well like italian spices, mixed herbs and paprika it tastes so nice try it sometime you will not be disappointed

Pickled onions. You also can get pickled broccoli, cabbage, mixed vegetables, etc.
