AUNT SMITHIE'S CARROT CAKE | |
1 1/2 cups cooking oil 2 cups sugar 3 eggs 2 1/4 cups flour 2 teaspoon cinnamon 2 teaspoons baking soda 1 teaspoon salt 2 teaspoon vanilla 2 cups grated carrots 2 cups flaked coconut 1 cup chopped walnuts or pecans 1 8 oz can crushed pineapple Cream together oil, sugar and eggs. Sift next 4 ingredients together and add to first mixture with remaining ingredients. Blend well. Bake in 13 x 9 inch pan at 350 degrees for 50 to 60 minutes, in greased pan. FROSTING: 1 3 oz package cream cheese 1/4 cup melted butter 2 tablespoons milk 1 teaspoons vanilla Add confectioner's sugar until icing is of spreading consistency. |
