RED VELVET CAKE 
1/2 c. butter
1 1/2 c. sugar
2 eggs
2 oz. red food coloring
2 tbsp. cocoa
2 1/4 c. plain flour
3/4 tsp. salt
1 tsp. vanilla
1 tsp. baking soda
1 c. buttermilk
1 tsp. butter flavoring, if desired
1 tbsp. vinegar

Cream butter, sugar, and eggs. Make a paste with coloring and cocoa. Add to mixture. Add flour and salt alternately with milk and vanilla. Put buttermilk into the cup that was used to make the paste in. Add soda and vinegar alternately. Don't beat, just blend. Bake in two 8-inch pans that have been greased and floured at 350 degrees.

FROSTING:

1 stick butter
1 (8 oz.) pkg. cream cheese
1 c. pecans
1 box confectioners sugar
1 tsp. vanilla

Mix together.
