SPINACH QUICHE 
1 box frozen chopped spinach
1 med. chopped onion
1 c. Bisquick mix
3 eggs, beaten
1/2 c. vegetable oil
1/2 c. Parmesan cheese
Parsley flakes and pepper

Cook spinach; drain and squeeze most of the water out. Mix eggs, oil, cheese, pepper and parsley well. Add Bisquick and mix well. Add spinach and onion (mixture will be thick) and mix well.

Put in quiche or pie dish (spread out mixture evenly). Bake 30-35 minutes in preheated 350 degree oven until sides are slightly brown. Do not overbake as mixture will dry out!
