GREEK SPINACH QUICHE 
Pie crust for 9-inch pan
1 (10 oz.) pkg. frozen spinach
1 c. milk
1 1/2 c. crumbled Feta cheese
3 eggs, beaten
1/4 c. butter, melted
4 tbsp. grated Romano cheese
2 tbsp. flour
1/2 tsp. pepper
1/4 tsp. salt
2 tsp. nutmeg

Line a 9-inch quiche dish with pie crust. Bake at 400 degrees for 3 minutes. Remove from oven and prick with fork. Bake for 5 minutes. Cook spinach according to package directions; drain well.

Combine spinach and remaining ingredients in a mixing bowl; mix well. Pour mixture into prepared pastry shell. Bake at 350 degrees for 35 minutes or until set. Let stand 10 minutes.

Hey - for the pie crust, just buy a frozen pie crust (I buy whole wheat when I can find them).
I use almond milk instead of milk and egg beaters.
I also mixed tofu with feta.
