SPINACH QUICHE 
STEP 1 - Quiche Bottom:
1 1/2 c. grated cheddar cheese
3/4 c. plain flour
1/2 tsp. salt
1/2 c. melted butter

Mix and pat into quiche pan, pie plate or upside of 9 x 13 inch dish. Set aside.

STEP 2:

Cook 1 package chopped spinach, salted. Drain well and squeeze out water with hand.

Bring just to boil: 1/4 c. chopped onion 1 tsp. salt 1/2 tsp. nutmeg & pepper

Remove from heat and add 3 beaten eggs. Gently stir in spinach. Pour into crust. Bake at 400 degrees for 15 minutes and 345 degrees for 20 minutes.
