SUMMER QUICHE 
In a medium sized bowl stir together the following:

3 eggs, beaten
1 c. half and half or milk or skim milk (More cream- richer quiche, less cream - fewer calories)

Add:

1 c. grated cheese

This can be either Swiss, Jack or cheddar or any combination you have. Add:

1/2 to 1 c. chopped fresh vegetables
2 tbsp. chopped onion
Dash of salt and pepper

(Such as zucchini squash or mushrooms or steamed ones such as broccoli or asparagus).

Stir mixture to blend and pour into pie shell. Bake in preheated 375 degree oven 35 to 45 minutes or until the top is golden brown. Allow the quiche to cool and firm slightly approximately 5 minutes before cutting.
