VEGETABLE QUICHE 
CRUST:

2 c. flour
1 tsp. salt
2/3 c. plus 2 tbsp. shortening
1/4 c. water

Mix and roll out above and fit into greased quiche pan or large pie plate.

QUICHE FILLING:

4-5 eggs
1 c. grated cheese
1/2 tsp. salt
1/3 c. milk
1 (10 oz.) pkg. frozen broccoli or spinach (thawed and drained)
1/2 c. chopped onion

Fill crust and bake at 325 degrees for 45 minutes. Add or substitute any ingredients you think would be good, e.g. baco bits, diced vegetarian Chickettes, tomatoes, green peppers, etc. Good served with baked potatoes.
