APPLE - STUFFED ACORN SQUASH 
2 acorn squash
Boiling water
3 tart apples
Melted butter
1/2 c. maple syrup or honey
Salt to taste

Wash squash; cut into halves lengthwise and scoop out seeds and fiber. Put in baking pan, cut side down and add 1/2 inch boiling water. Bake in preheated 400 degree oven for 20 minutes.

Meanwhile, peel, core and dice apples. Mix apples with 1/4 cup melted butter and the syrup or honey. Turn squash halves cut side up and brush cut surfaces with melted butter. Sprinkle with salt and fill with apple mixture. Cover pan with foil and continue baking in 400 degree oven for 30 minutes.
