ARTICHOKE & SPINACH DIP 
1 (10 oz.) pkg. frozen chopped spinach (thaw & drain well)
1 lg. can artichoke hearts, chopped & drained
1 c. Monterey Jack cheese, shredded
1 c. grated Parmesan cheese
Medium white sauce (2 tbsp. butter, 2 tbsp. flour, 1 c. milk)
Dash hot sauce

WHITE SAUCE: Melt butter over low heat. Blend in flour. Cook over low heat until smooth and bubbly. Remove from heat. Stir in milk. Heat to boiling, stirring constantly. Add remaining ingredients until well blended. Add hot sauce to taste. Serve warm with tortilla chips.

My husband HATES mayo, and most spinach artichoke dips use it. This recipe, however, does not, and it is SO GOOD! If you're looking for a good, cheesy version of this dip, try this one. We make it to take to friend's houses and everyone always raves about how good it is. We usually serve it with slices of French bread instead of chips.
