FUNNEL CAKES 
2 eggs
1 1/3 c. milk
2 2/3 c. flour
4 tbsp. sugar
1/2 tsp. salt
1 tsp. baking powder
2 tsp. baking soda
Shortening (for deep fat frying)
Powdered sugar

Beat the eggs and add milk to them. Sift the flour, sugar, salt, baking powder and soda together. To these add the egg and milk. Beat until smooth.

Heat shortening to 375 degree F.

Holding a finger over the end of the funnel, pour some of the batter into the funnel. Drop batter into the hot fat, swirling it in circles from the center outward. Make each cake about 6 inches in diameter. Fry until golden brown, turning once. Serve warm with powdered sugar.

NOTE: Funnel should have 5/8 inch opening.
