MOLDED SPINACH SALAD 
1 sm. pkg. lemon gelatin
1 1/2 c. boiling water
1 c. cottage cheese
1 c. finely chopped fresh spinach
1/2 c. chopped celery
1 tbsp. chopped onion
1/2 c. mayonnaise
1 1/2 tbsp. cider vinegar
1/4 tsp. salt
Dash of pepper

Combine gelatin and boiling water; cool. Whip until consistency of egg whites. Fold in remaining ingredients. Place in mold; chill until firm. Serve on lettuce. Yield 6 servings.
