C.'S CON QUESO 
2 c. yellow squash
1 lg. bell pepper
1 med. jalapeno pepper
1 sm. box jalapeno cheese (Velveeta)
1 lg. yellow onion
2 lg. banana peppers
2 lg. ripe tomatoes

Spray bottom of dish with Pam. Dice all ingredients and put in dish. Cook on low heat, until all tender (1 hour). Drain all juice; turn off stove. Slice cheese; place on top of mixture. Cover. When cheese has melted, serve as side dish or make a Spanish burrito.
