WHOOPIE PIES 
COOKIE BATTER:

1/2 c. butter
1 c. sugar
2 eggs
1 tsp. vanilla
1 c. milk
2 c. flour
5 tbsp. cocoa (or 3 sq. Baker's chocolate)
1 1/4 tsp. baking soda
1 tsp. salt

FILLING:

3/4 c. Crisco
3/4 c. confectioners' sugar
1 c. marshmallow creme
1/2 tsp. vanilla

Cream butter and sugar. Add eggs, vanilla and milk; mix well. Add flour, cocoa, baking soda and salt; mix well. If using Baker's chocolate, melt in double boiler with paper still on. When melted, scrape from paper into dry ingredients and mix well.

Filling: Mix Crisco and sugar very well. Add vanilla. Blend marshmallow creme to Crisco and sugar until smooth. When cookies are cooled spread filling on one cookie making a sandwich with a second.

Bake on ungreased sheet, spreading in a 2 inch circle with back of spoon. Bake at 350 degrees for 10-12 minutes.
