SPICY GROUND TURKEY BALLS AND BULGAR WITH DRIED FRUITS | |
2 whole wheat bread slices 2 tbsp. milk 1/4 c. pack cilantro or parsley leaves, chopped 1 lb. turkey 1 tsp. cumin 1/4 tsp. ground turmeric 1/2 tsp. salt 1/4 tsp. pepper (Cilantro sprig for garnish) Preheat oven to 400 degrees F. Crumble bread. Sprinkle with milk. Fold in turkey, cilantro, cumin, turmeric, salt and pepper. Divide into 12 portions. Roll in balls. Place on greased baking sheet. Bake 11 minutes. Garnish with cilantro sprigs and serve with bulgar with dried fruits. BULGAR WITH DRIED FRUIT: 1 tbsp. butter 2 tsp. chicken flavor bouillon granules 1 c. bulgar 1/2 c. each dried apricots and currants In medium saucepan bring butter, chicken granules and 2 cups water to boil. Stir in bulgar. Reduce heat, cover and simmer 15 minutes. Stir in apricots and currants. Cover and cook 5 minutes until bulgar is tender and liquid has been absorbed. |
