“FRENCH DRESSING” IS IN:
NEXT RECIPE:  GINGER DRESSING

FRENCH DRESSING 
1/2 cup cider or red wine vinegar
3 cloves fresh garlic, peeled
1/4 cup water
1 1/2 cups olive oil
1 small can tomato puree or soup
2 teaspoons Worcestershire sauce
1/4-1/2 cup sugar, to taste
1/2 teaspoon black peppercorns
1 teaspoon prepared mustard
1 shallot, peeled (optional)

This is a basic recipe; herbs such as fresh basil, oregano and thyme may be added for variation.

In a blender or food processor, process garlic and vinegar. Allow to sit for 5 minutes before proceeding with recipe. This takes the raw edge off the garlic flavor. If using a shallot, add and process at this point, along with any chosen fresh herbs.

Add remaining ingredients and process until smooth.
