ISLAND LIME BROWN RICE SALAD 
1 c. par boiled brown rice
1/2 c. vegetable oil
1/3 c. lime juice
1 tbsp. sugar
1 tsp. salt
1/8 tsp. pepper
1 to 1 1/2 c. cauliflower, cut in sm. florets
1 c. sm. cherry tomatoes, cut in half
1/3 c. chopped red onion
1 (6 oz.) pkg. frozen Chinese pea pods

Cook rice according to package directions, omitting butter. Transfer to large bowl. Combine oil, lime juice, sugar, salt, and pepper, mixing well. Stir into rice. Let stand at room temperature about 20 minutes, stirring occasionally. Stir in cauliflower, tomatoes, and re d onion. Pour warm water over frozen pea pods to separate. Gently stir into rice mixture. Chill thoroughly. Makes 8-10 servings, about 8 cups rice salad.
