BEEF CORDON BLEU 
4 slices ham
4 sticks Monterey Jack cheese (3 x 1/2 inch)
4 (4 oz.) beef sirloin steaks, pounded
2 eggs
2 tbsp. water
1/2 c. fine dry bread crumbs
2 tbsp. butter

Roll ham around each cheese stick. Place in center of beef. Fold beef over envelope style. Secure with a wooden toothpick. In a small bowl, beat egg and water. Dip beef rolls in egg mixed with water. Coat with bread crumbs.

In glass baking dish, microwave butter on high 15 to 20 seconds or until melted. Roll beef in butter. Microwave on high 5-6 minutes until beef is done and no longer pink (varies with microwave). Serves 4.

Since microwave ovens vary in power, you may need to adjust your cooking time.
