“DAISY COFFEE CAKE” IS IN:

DAISY COFFEE CAKE 
1 1/2 cups flour
1 cup light brown sugar
1/2 tsp. salt
1 tsp. cinnamon
1/4 cup butter
1 tsp. baking powder
1 egg
3/8 cup milk
1/2 tsp. vanilla

Preheat oven to 375°F.

In a large bowl, whisk together flour, sugar, salt and cinnamon until no streaks remain.

Using a pastry blender or two knives, cut in 1/4 cup butter until mixture resembles coarse crumbs. Measure out 1/4 cup of this mixture and set aside for later.

Into the large bowl, stir baking powder, egg, milk and vanilla. Mix for 1 minute.

Turn batter into a greased and floured round or square cake pan. Sprinkle the reserved mixture over top of cake. (Cinnamon sugar may also be lightly sprinkled over cake, if desired).

Bake for 25-30 minutes.
