1 1/2 c. all purpose flour
2 tsp. baking powder
1/3 c. shortening
3/4 c. sugar
3/4 c. milk
1 egg
1 1/2 tsp. vanilla

Grease and lightly flour a 9"x9"x2" pan. In a small mixer bowl combine all ingredients and 1/4 teaspoon salt. Beat with mixer until combined. Beat 2 minutes on medium speed. Pour into pan. Bake in a 375 degree oven for 25 to 30 minutes or until done. Cool and serve with whip cream or your favorite topping.
