ITALIAN SHRIMP OVER LINGUINI 
2 tbsp. grated Parmesan
2 handfuls linguini
1 1/2 lb. shrimp, med.
1 can crushed tomatoes
1 sm. can tomato paste
Pinch of oregano, sweet basil, parsley
1/2 tsp. salt & pepper
1/4 c. diced onion
1 clove garlic, crushed
2 c. grated mozzarella
1/2 c. water

Combine tomato paste, water, herbs, garlic, onion, crushed tomatoes, Parmesan, salt and pepper. Bring to boil and simmer for 1 hour. Boil linguini until not quite soft.

Meanwhile add shrimp to sauce and cook until done. Drain pasta and divide onto 2 oven proof dishes. Spoon shrimp and sauce on top. Cover with grated mozzarella. Broil until melted and bubbly.
