POTATO BALLS 
6 lg. potatoes, boiled and mashed
2 eggs, beaten
3/4 c. flour
1/2 c. bread crumbs
3 qt. water
3 tsp. salt

Spread mashed potatoes on clean towel to cool and dry out the moisture about 10 minutes. Combine the eggs with flour, crumbs, 1 teaspoon salt and potatoes. Roll into balls. Cook in uncovered boiling water until balls come to the top. Then boil 3 minutes, drain, slice and fry.
