SWEET POTATO BALLS 
3 c. cooked sweet potatoes
1/2 c. brown sugar
8 marshmallows
1/4 c. butter, softened
1 to 2 tsp. milk, as needed
1 c. graham cracker crumbs

Mash potatoes; add butter and sugar and a little milk if mixture appears dry. Center a marshmallow in the center of about 1/2 cup of potato mixture. Roll in crumbs. Bake 20 minutes at 350 degrees.
