SUNSHINE POTATO BALLS 
1/4 c. melted butter
1/4 c. milk
2 tbsp. sugar
1/2 tsp. salt
1/4 tsp. pepper
4 c. mashed & cooked sweet potatoes
18 - 20 mini marshmallows
3 c. coarsely crushed corn flakes

Beat butter, milk, sugar, salt and pepper into potatoes; form 2" balls with marshmallow centers. Roll in corn flakes. Place in greased 13"x9"x2" baking dish. Bake at 375 degrees for 25 to 35 minutes or freeze, then bake (without defrosting) 45 minutes. Makes 18 to 20 potato balls.
