SWEET POTATO BALLS IN WALNUTS 
2 1/2 c. mashed sweet potatoes
1/2 tsp. salt
Dash pepper
2 tbsp. melted butter
1 c. chopped walnuts
1/3 c. honey

Combine first five ingredients. Chill for easier handling. Shape into 2 inch balls. Use 1/4 cup mashed potatoes for each.

Heat honey in small heavy skillet. When hot, add potato balls, one at a time. With two forks carefully roll in glaze to coat. Roll in chopped nuts. Place not touching each other in greased shallow dish. Bake 350 for 20 minutes.
