PORK SATAY 
8 brazil nuts, shelled
2 tbsp. coriander, ground
1/8 tsp. red pepper, ground
1/4 tsp. black pepper, ground
1 clove garlic, minced
2 tbsp. onion, finely chopped
1 tsp. salt
1 tbsp. brown sugar
3 tbsp. lemon juice
1/4 c. soy sauce
1 1/2 lb. lean pork
Olive oil

Grind nuts and mix well with all ingredients except the last two (pork and olive oil).

Cut pork into 1 to 1 1/2 inch cubes, add to marinade, mix well, let stand overnight or minimum of 2 to 3 hours.

Skewer and broil, basting with olive oil. Or grill.

Serves 5 to 6.
