ITALIAN SAUSAGE 
2 lbs. Italian sausage
1 (16 oz.) can tomatoes
1 onion, chopped finely
Celery
1 tsp. basil
1 tbsp. parsley
1/2 tsp. salt
1/2 tsp. pepper
1 can water
2 tbsp. tomato paste

Cut Italian sausage into 3" pieces and bake at 350 degrees for about 20 minutes. Put on paper towels to absorb grease and cut into 1" pieces. Meanwhile, in a fry pan saute 1 finely chopped onion and celery in olive oil. Add 1 can tomatoes and 1 can water; simmer. Add 2 tablespoons tomato paste, 1 teaspoon basil, 1 tablespoon parsley, 1/2 teaspoon salt and fresh ground pepper. Simmer about 15 minutes and add chunks of sausage. Cover and simmer at least 1 hour. Remove cover and simmer about 5 minutes to remove water and to thicken sauce.
