“RAISIN CAKE” IS IN:

RAISIN CAKE 
1 1/2 cups raisins
3 cups boiling water
2 tablespoons butter/shortening
1 1/2 cups sugar
1 1/2 teaspoons cinnamon
1/4 teaspoon ginger
3/4 teaspoon powdered cloves
1 teaspoon baking powder
1 teaspoon baking soda
2 1/2 cups all-purpose flour
Pinch salt
2 eggs

Preheat oven to 350°F.

Place raisins and butter or shortening in boiling water. Boil 15 minutes. Drain and cool.

Sift together all dry ingredients. Add the two eggs and raisin mixture. Stir with a wooden spoon until well mixed. Pour mixture into a greased angel food pan or large loaf pan.

Bake for 1 hour, or until cake tester comes out clean.

NOTE: This is a great recipe for the holidays and it keeps very well.

Yield: 10 servings.
