LILLIAN'S PORK & KRAUT | |
3 to 4 lb. pork loin roast Peanut oil 2 lbs. sauerkraut 1 apple, cored (not peeled) 1 yellow onion (2-inch diameter), chopped 8 potatoes, peeled & halved Black pepper Brown roast in large, heavy pan on high with small amount of peanut oil to start browning. Place sauerkraut around roast. Cover with lid and bake for 2 hours at 325 degrees. At 2 hours, take meat out. Place vegetables in pot, then meat on top and coarse black pepper. Bake together 1 more hour at 325 degrees. |
