LILLIAN'S PORK & KRAUT 
3 to 4 lb. pork loin roast
Peanut oil
2 lbs. sauerkraut
1 apple, cored (not peeled)
1 yellow onion (2-inch diameter), chopped
8 potatoes, peeled & halved
Black pepper

Brown roast in large, heavy pan on high with small amount of peanut oil to start browning. Place sauerkraut around roast. Cover with lid and bake for 2 hours at 325 degrees. At 2 hours, take meat out. Place vegetables in pot, then meat on top and coarse black pepper. Bake together 1 more hour at 325 degrees.

Unless you use small red potatoes or tender new potatoes, these won't be close to done in an hour at that temp. Also, we browned the meat in olive oil since it was going to cook at such a low temp, but peanut would have worked too if we'd had any. Otherwise, this was a very tasty recipe. (We wound up taking the undercooked potatoes out and boiling them to make mashed potatoes.)
