PASSOVER COTTAGE CHEESE PANCAKES 
1/2 lb. cottage cheese
2 c. matzoh meal (sold with Jewish foods)
1/4 - 1/2 c. sugar (your choice)
3 eggs
2 c. milk
1 tsp. vanilla extract

Mix all ingredients - batter will be soft. Drop by spoonfuls on a hot griddle, press down so that pancake can brown well. Turn to brown other side. Serve with maple syrup, preserves or some cream. Serves 6 hearty eaters.
