ASPARAGUS AU GRATIN 
1 1/4 lb. fresh asparagus or 10 oz. frozen
2 tbsp. butter
2 tbsp. chopped onion
2 tbsp. flour
1/2 tsp. salt
1/8 tsp. white pepper
Dash of nutmeg or mace
2/3 c. chicken broth
1/3 c. half & half
Toast points, rusks or Texas toast
butter
1/2 c. shredded cheddar cheese

Clean and cook asparagus in small amount of boiling water (or microwave) until tender crisp, 3 to 4 minutes. Drain, set aside.

In medium saucepan, melt butter; stir in onion, cook until transparent. Stir in flour, salt, pepper and nutmeg, mace over low heat until smooth. Stir in broth and cream; cook until thickened and stir constantly. Set aside; butter toast; place under preheated broiler until golden brown. Remove to 13 x 9 inch dish. Place asparagus on bread; pour sauce over all. Sprinkle cheese. Bake at 400 degrees for 8 to 10 minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
