ASPARAGUS AU GRATIN 
1 1/4 lbs. asparagus
2 tbsp. butter
2 tbsp. chopped onion
1/2 tsp. salt
2 tbsp. flour
1/8 tsp. white pepper, ground
Dash ground nutmeg
2/3 c. chicken broth
1/3 c. half and half
Texas toast
Butter
1/2 c. shredded Cheddar cheese

Cook asparagus until crisp (3-4 minutes). Drain. Set aside. In medium saucepan melt butter; stir in onion, cook until transparent. Stir in flour, salt, pepper and nutmeg over low heat until smooth. Stir in broth and cream; cook until thickened; stir constantly. Set aside.

Butter Texas toast and broil until golden brown. Remove and place in 13x9x2 baking dish. Place asparagus over bread; pour sauce over all. Sprinkle with cheese. Bake at 400 degrees for 8-10 minutes or until cheese melts.
